minced from a jar (that would be about 1 table spoon garlic, I like garlic)(!
• Use red, green, yellow, or orange bell peppers, chopped or diced
•1 can Hunts tomato puree (optional)
• Pasta of your choosing (penne, rigatoni, etc.)
• Fresh Parmesan cheese - or if you want a LOT of cheese, shredded mozzarella
Salt and pepper to taste

Directions

Cook pasta and set aside, drained in a colander.

Sauté onions, garlic & peppers until tender.  Hubby doesn't liked warm or
cooked tomatoes, so we add ours in cold, later.  When he's not eating this, I
toss in the tomatoes and let them cook in with the onions, etc.  Add in salt,
pepper and can of puree here, stirring to mix in all vegetables.

Place pasta in large bowl then pour sauce over pasta.  Stir to mix well!  Add in
cooked broccoli - or any other type veggie you like - peas, corn, whatever.  Just
toss in what you want.

Shake fresh shredded Parmesan cheese (or mozzarella) over dish and serve warm
or cold.

Additions:  We chopped up some grilled chicken breasts and added it in.  
Another addition could be cooked lean ground beef.  Just remember to keep it
on the healthy side - i.e., watch that mozzarella!  Don't o.d. on cheese.

We don't always use the tomato puree; sometimes just add more diced
tomatoes.
