| •1 small onion, chopped (red or yellow) •1-2 tablespoon butter •1-2 cloves of garlic(depends on your taste) chopped into small pieces • Food processor or blender Directions Steam or boil the cauliflower. Chop the onion and sauté it with either olive oil, butter or even coconut oil. Add the cooked cauliflower to the sautéed onions and sauté together for approximately 8-10 minutes. **In food processor or blender, puree the cauliflower and onion. Add a tablespoon or more of butter and blend well. Take chopped garlic. Add more oil to pan and lightly cook the garlic until brown (try not to burn it). Pour the garlic into your mashed cauliflower and mix by hand. Eat and enjoy! You'll be pleasantly surprised. I hear even people who don't like cauliflower like this dish. |
